Fig coffee could become one of 2027’s biggest café trends as fruit flavors gain popularity among younger consumers. Nestlé’s latest forecast highlights growing demand for inventive drinks, with fig emerging as a standout ingredient, reports the customreceipt.com.
Why Fig Coffee Is Gaining Popularity
According to Nestlé’s 2027 Food and Beverage Trend Forecast, fruit is becoming a central ingredient in specialty coffee.
Research firm Datassential reports that fig mentions on coffee menus increased 98.5% over the past year.
Figs offer a naturally sweet, jam-like flavor with caramel and toffee notes. These qualities complement espresso without overwhelming its roasted character.
Linh Phillips, Nestlé USA’s consumer insights director, expects dates, figs, cherries and plums to feature in increasingly creative coffee recipes.

What Is Driving the Fruit-Flavored Coffee Trend?
Nestlé identifies several signals behind the changing preferences:
- Social conversations about fruit-flavored coffee increased more than 23% annually.
- Searches for banana bread lattes rose 6,267% year over year.
- Around 63% of Gen Z coffee drinkers prefer strongly flavored coffee.
These figures suggest growing demand for experimentation rather than traditional sweetened coffee alone.
The trend also extends to iced drinks, matcha and beverages featuring fruit-based toppings.
Nashville Café Shows How Fig Coffee Works
At Steadfast Coffee in Nashville, the seasonal drink “Fig Season” combines homemade fig syrup with cream cheese cold foam and pistachios.
General manager Sydnie Neumann told Delish that the creation drew inspiration from cheese and jam pairings.
The café reportedly struggled to keep the popular drink in stock.
Nestlé expects similar combinations to become more visible in 2027. Fruit jellies, cold foam and freeze-dried toppings could make specialty coffee more appealing.
The forecast signals a broader shift toward drinks offering distinctive flavors, textures and presentation.
